Our daughter, Ainsley, was diagnosed with Celiac Disease at age 2 after a very challenging journey with doctors, multiple long hospital stays, numerous tests, and countless consultations. As diagnoses with food-related illnesses, especially Celiac Disease and gluten allergies, become more prevalent, it’s important for kids and families to feel understood and be part of a supportive community. That’s why we decided to write a couple of books. :)
